La Maison André Boyer in Sault is one of Vaucluse's oldest businesses, founded in 1887 by Ernest Boyer, a master nougat-maker in Sault. His small artisanal factory carries the label of "Entreprise du Patrimoine Vivant" ("Living Heritage Company").
Authentic Sault nougat is handmade using carefully selected products: lavender honey harvested on the slopes of the Mont Ventoux and local almonds. White nougat, which is smooth, airy and soft, and carefully caramelised black nougat are the two sweets whose quality of flavour has remained the same for more than a century, and which have earned this house its reputation. Come and discover this traditional skill!
